The San Marzano tomato variety, whose features are enhanced by the canning process, is well-known and appreciated all over the world. The intrinsic features of this highly valued and worldwide known product are: typical bittersweet taste, characteristic elongated “plum” shape, with longitudinal parallel depressions, firm flesh with a low seed count; the skin is an intense bright red colour and peels off easily; these main characteristics, along with the chemical-physical ones, make the San Marzano tomato unique both fresh and canned.
